Spicy Mac ‘n Cheese

Prep time: 20 mins Cooking time: 40 mins – Serves 6

1 lb elbow macaroni
1/2 lb small mushrooms
1 onion, chopped
2 garlic cloves, chopped
14 oz can of diced tomatoes
10 oz pack of frozen spinach, thawed and drained of juices – squeeze hard
1/2 cup of breadcrumbs
1/2 cup of Parmesan cheese, plus 2/3 cup more for later

2 tablespoons butter, plus 2 more

12oz mozzarella cheese, cubed
1/4 teaspoon ground nutmeg
1/2 teaspoon red pepper flakes
Salt, for pasta

Cooking Instructions
You will need a skillet, pan for the pasta and a glass oven dish.
Heat oven to 350
Cook pasta in boiling salted water, al dente (not quite done, it’s going in the oven later)
Add oil to skillet with mushrooms, garlic & onion, sauté 7 mins, until vegetables soften on a medium heat.
Add tomatoes, spinach, red pepper flakes, cook for a further 5 minutes.
Mix the bread crumbs with the 1/2 cup Parmesan cheese. Spread 2 tablespoons of butter all over the oven dish and add 1/2 the breadcrumb mix. Shake it around until the breadcrumbs are stuck to the butter.
Combine cooked pasta to vegetables, adding the 2/3 rd cup Parmesan cheese, cubed mozzarella and nutmeg, mix well, mozzarella will go stringy, so work fast.
Transfer all to coated oven dish, top with the remainder of the breadcrumb mix and the top with remaining 2 spoons of better, cut into little dots.
Bake in the oven for 30/40 minutes
