Crisp, Crunchy & Fresh – Summer Side Dishes

Three tasty, healthy side dishes making frequent appearances at our dinner table throughout the summer.

Greek Salad

Prep Time 15 mins. Serves 4



  • 3 tablespoons olive oil
  • 1 1/2 teaspoons fresh lemon juice
  • 1 garlic clove, chopped fine
  • 1/2 teaspoon oregano
  • Salt and pepper


  • 2-3 plum tomatoes, seeded, cut into wedges.
  • Substitute with 1/2 red pepper (tomato haters!)
  • 1/4 red onion, sliced and put into vinegar water for 5 minutes.
  • 1/2 cucumber, cut into thick half moons.
  • 1/2 green pepper, chopped into good size chunks .
  • 8 Pitted Kalamata olives
  • 4 ounces feta cheese.


Mix dressing ingredients together.  Mix vegetables together, drain onion after 5 minutes in vinegar water and add to bowl.  Drizzle with dressing, toss, add Feta cheese

Serve with Tzatziki sauce, with grilled lamb chops or Lemon roasted chicken breast and pita bread.


Southern Coleslaw

Prep Time 15 mins. Plus 1 hour to cool. Serves 6


  • 1/2 cup olive oil
  • 1/2 cup Apple Cider Vinegar
  • 3 tablespoons sugar
  • 1/2 teaspoon red pepper flakes
  • Juice of one lime


  • 1 package coleslaw mix from the produce aisle
  • 1/2 red onion, sliced thin, soaked in 50/50 water, vinegar mix for 5 minutes
  • 1/2 an apple, sliced thin, skin on
  • 1/2 cup chopped walnuts


Heat oil, vinegar, sugar and pepper flakes over a gentle heat to dissolve sugar.Transfer to a glass jug, to cool, add lime juice Salt and Pepper.  Mix slaw ingredients together in a large bowl, drizzle on dressing, toss well, refrigerate for an hour before serving.  Perfect served with steak, burgers and crab cakes.



Prep Time 15 mins. Serves 4

  • 3 Ears of Corn, cooked, kernels removed or 1 cup canned corn, drained
  • Small red pepper, chopped small – about 1 cup
  • Small can of Lima beans, drained – about 1 cup
  • 1 cup canned  black beans, drained
  • 1/2 red onion, diced
  • 1 tablespoon butter
  • Salt and Pepper
  • Sprinkling of red pepper flakes


Melt butter in a skillet.  Add onion and pepper, cook for 5 minutes to soften both.  Add corn, lima and black beans. Season with salt, pepper and red pepper flakes.  Continue until heated through.  Serve.
